Crunchy Honey Chicken

Well after yesterdays Peanut Butter Bars I thought I should post a healthy recipe! This stir fry is quick and tasty, it makes for a great week night meal. I know after working all day the last thing I want to do is spend an hour in the kitchen making dinner.
This recipe is great because you can add whatever veggies you have in the fridge and it will taste great! Try it tonite, you will be happy you did!
Ingredients:
2 whole egg whites
½ cup cornstarch or flour
3 tablespoons of olive oil
2-3 chicken breasts, chopped into strips or bite sized pieces.
1 cup of broccoli florets
½ of a red pepper, thinly sliced
½ cup mushrooms, sliced
You can use any veggies you like, the original recipe called for sugar snap peas I didn’t have any, you could use carrot or celery also!
2-3 cloves of garlic, minced (the original recipe called for 1 clove but I love the garlic!)
1-2 tablespoons of soy sauce
¼ cup of honey
Salt/pepper to taste

First chop all the veggies,
and your chicken,

In 2 separate bowls, add the egg whites (lightly beaten) and the cornstarch or flour (the cornstarch makes for crispier chicken!)
Heat in a large skillet over medium high heat 1 tbsp of olive oil. Add the veggies and a sprinkle of salt and pepper and saute for about 5 minutes, until just softened. You don’t want them fully cooked they are going back on the heat later! Add in the soy sauce and garlic, stir to coat, about another 60 seconds, remove from fry pan to a bowl, set aside.
Cut up the chicken and dry with a piece of paper towel, dry chicken will brown better! Season chicken with a little salt and pepper. Heat the same skillet over medium high heat and add the remaining 2 tbsp of olive oil. Dip the chicken pieces in the egg white then lightly dredge in the cornstarch. Add to fry pan and let brown for 2-3 minutes, then flip and brown the other side. Do in batches if needed, you don’t want to crowd the pan, again you get better browning!
Once the chicken is cooked, add the veggies back in. Add the honey and mix to combine. Taste and season as needed, with more salt/pepper or soy etc.
Serve with rice.
Yummy and guilt free! Now I can go eat a peanut butter cup bar or 2!!

  1. Can't wait to try this one it looks super good! I had your creamy tomato last night and it was to die for!! The reciepe for it has dissapeared from your blog though! So good. Sorry I can't spell but I can cook and eat and thanks so much for your great ideas and awseume pictures too!!
