Buttermilk Pancakes

Happy Pancake Day Everyone!
You all know what pancake day is right? NO? Well according to Wikipedia Shrove Tuesday is a term used in English-speaking countries, especially the United Kingdom, Canada, Australia, New Zealand, Philippines, and parts of the United States for the day preceding Ash Wednesday, the first day of the season of fasting and prayer called Lent.

In the United Kingdom and Ireland, Shrove Tuesday is more commonly known as Pancake Tuesday or Pancake Day.
In Canada, among Anglicans, Lutherans, some other Protestant denominations, including ethnic British communities, as well as Catholics, this day is also known as Pancake Tuesday, as it is customary to eat pancakes
Pancakes are associated with the day preceding Lent because they were a way to use up rich foodstuffs such as eggs, milk, and sugar, before the fasting season of the 40 days of Lent. The liturgical fasting emphasized eating plainer food and refraining from food that would give pleasure: In many cultures, this means no meat, dairy, or eggs.

My Dad always used to make us pancakes for dinner on Shrove Tuesday. I have kept the tradition alive and make them each year too. Really any excuse to make pancakes for dinner!

So here is what you will need,
1 cup all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 tbsp. sugar
1 large egg, lightly beaten
1 1/2 cup buttermilk
2 tbsp. butter, melted

How to:
Heat griddle to 375 degrees. Whisk together the flour, baking powder, baking soda, salt and sugar in a large bowl. Add in the egg, buttermilk and butter. Whisk just to combine, it should be a little lumpy, don't over mix!
Put about 1/4 cup of the batter onto the grill and gently spread it into a circle. Cook until pancakes have little bubbles on the top and are dry around edges about 2 1/2 minutes. Flip over and cook until second side is golden brown, another minute or two.
Repeat with remaining batter until you have a lovely stack of pancakes.
You can keep cooked pancakes warm in a preheated 250 degree oven on a plate.

The first couple I made I did just plain, YUM.


Then I remembered I had some frozen blueberries so I tossed a few of those into the next few, YUMMIER.

Well then I just felt sassy so I tossed in some milk chocolate chips! WOW! Major YUM!


This made 8 medium sized pancakes, you could easily double the recipe if you were feeding a crowd.

I ate one of each kind. I love pancake day....
