Luscious lemon Loaf

I love lemons!
This means I love anything made with lemons!
I have had a lot of lemon loaves in my day but this one is by far the best. Moist and very lemony. Just the way I like it! Make it this weekend, you will be very happy you did.

Ingredients,
½ cup butter, softened
1 cup sugar
2 eggs
1 ½ cup flour
1 tsp baking powder
¼ tsp salt
½ cup milk
Grated rind from 1 lemon

For the syrup:
Juice from 1 lemon
¼ cup sugar

Heat oven to 325 degrees. Line a loaf pan with wax paper, spray with nonstick spray.
In a large bowl, cream butter and sugar together. Add the eggs one at a time until well incorporated. In a separate bowl combine the flour, baking powder and salt.
Add ½ the flour mixture to the butter mixture, stir to just combine, then add half the milk and stir. Add the remaining flour mixture and then the rest of the milk. Stir the lemon rind in. Pour the batter into the loaf pan.
Bake for 45-50 minutes or until a toothpick comes out clean.
MMMM looks good already! But wait it gets better!
In the meantime combine the lemon juice and the ¼ cup sugar. When the cake is done leave it in the loaf pan and poke holes in the cake with a knife or skewer.
I apologize for my creepy claw like hand!
Pour the syrup over the warm cake.
Oh Baby!!
Let it sit for 15 minutes or so in the pan and let the syrup sink in.
Remove from pan and let it cool on rack.
This would be great to take to a brunch or shower, or you can do what I did and eat for breakfast all week! So so very good.
