Curry Tuna Pita

This is one of my favourite lunches. I often make it up and take it to work, I can usually get 2 lunches out of it. Just take the tuna mixture in a container and the pita separately and build it at work. 

What you need,


1 can of tuna, packed in water
1 green onion, chopped
1 apple, diced finely (I usually like a tart apple like granny smith but all I had was a gala and it was great! Use whatever you have on hand)
1 tsp of yellow curry powder (if you like it a bit spicier add an additional ½ tsp!)
¼ of mayo (or just enough until it’s your desired creaminess)
Salt and pepper to taste
2 pocket pita breads
Lettuce leafs

Open and drain the tuna. Put it in a bowl and break it up with a fork. Add in the chopped green onion and the diced apple. Add in the curry powder and salt and pepper to taste. Stir in the mayo.
Stuff some lettuce leafs into a pita pocked and top with the tuna mixture.

Yum Yum!
This is such a nice variation on the same old tuna salad sandwich.
