I warn you, this stuff is ADDICTIVE! I love it! It is my favorite Christmas treat.
You could make it any time of year, but you shouldn’t. I always end up making 2 batches, at least, because I scarf the first batch before it is even cooled and ready to package up!
What you need,
2 cups semi-sweet chocolate chips
2 cup peanut butter
5 tbsp. butter
1 tsp. vanilla
6 cups Crispix cereal
2-3 cups icing sugar
Over medium heat in a large heavy bottomed pot, melt the chocolate chips, peanut butter, butter and vanilla together. Meanwhile put the cereal in a VERY large bowl. Pour the melted chocolate over the cereal and very gently toss to coat, you want to be gentle here so you don’t crush all the cereal bits!
I usually divide the icing sugar between 2 large zip top bags. Roll down the tops so it is easier to scoop the gooey cereal into it.
Scoop half the cereal mix into each zip top bag. Gently shake, roll and toss the bags until all the cereal is coated in the icing sugar.
I line my counter with wax paper, and then I pour the coated cereal onto it and spread it out into a single layer, make sure each piece is well coated. Let it sit for 30 minutes or so or until it is cooled and you can handle it.
Place it your mouth... I mean in an air tight container. I usually keep half out and put the other half in the freezer, it freezes well and that way I probably won’t eat it all in one go!!
