Cornbeef Hash

I had the most amazing supper tonight! Cornbeef hash with poached eggs and toast.



I cooked a cornbeef, potatoes, and cabbage in the slow cooker for dinner last night. I decided to use the left overs to make a quick and delicious dinner.


What you need,
1/2 cup left over cornbeef, diced
1/2 cup left over potatoes, diced
1/4 cup left over cabbage, diced
1/4 cup left over onions, diced
2 eggs
toast

Combine the cornbeef, potatoes, cabbage and onions in a small skillet over medium high heat. Cook in a single layer until it starts to brown. Flip over with a spatula and brown on the other side.
In the meantime cook a couple of eggs, I like mine poached.

Slide the hash onto a plate pile the eggs on top and serve with toast.


So simple and so good! It only took 10 minutes start to finish.
This is a GREAT way to use up your left overs.
