Barbequed Tin Foil Potatoes

These barbequed tin foil potatoes are one of my all-time favourite summer side dishes!


It is so simple and the potatoes taste amazing. They are great with steak, chicken, pork even a good old hot dog!



What you need,

2-4 medium sized potatoes
1 small onion, sliced thin
4-6 large button mushrooms quartered
2-4 tbsp. butter
Seasoning Salt and Pepper
Olive oil
Sour Cream for serving

I like to start by microwaving the potatoes for a few minutes; it just speeds up the barbequing process. Poke a few holes in each potato then cook in the microwave on high for 2-3 minutes until they just start to soften, not too much.

Cut your potatoes in slices about ¼ inch thick.

Cut 2-4 pieces of tin foil, you want the pieces to be double thick so fold the piece of foil over.
Drizzle on a little olive oil on the center of the tin foil. Place the potato slices on in an even thin layer, add some onion and mushrooms.  Season the veggies with seasoning salt and pepper to taste. Place about 1 tablespoon of butter on each potato.

Fold the foil around the potatoes to make a neat pouch.

Cook on the barbeque on medium high heat for 15-20 minutes until the potatoes are tender and starting to brown. You will need to flip the foil pouches over about halfway through.

Serve with a little sour cream.



I love these potatoes! You can add whatever veggies you like to the packs, I just happen to love mushrooms, but you can skip them if you want to.
